baby quesadillas are the way to go

ds won't eat chicken if it's placed in front of him, nor with he eat most veggies.

For the past three dinners I have made quesadillas with chicken and cheese and have changed the veggie each night - he eats the whole thing and asks for more. 

I think I going to start buying the whole wheat wraps though.

  • great idea.  I'm guessing that you chop the chicken and veggies pretty small and just use a little cheese???

  • Sometimes I think DD is the only toddler who doesn't gobble up quesadillas! I thought for sure she'd love them since she loves cheese, but no. ::sigh::

  • DD love them too and i do use whole wheat tortilla i put everything from turkey w/cheese and carrots, ham cheese brocilli MMMM they are quick and easy.. I spray pan w/olive oil brown it and fold it over and cut into tiny squares..

    Jude, too!  I just take a half a tortilla and put a bit of cheese on it, followed by beans, veggies, whatever and some more CHEESE (he looove "eese" as he says) and heat it up a bit.  He refuses to eat the tortilla so it kind of acts as a plate and he picks everything off!

    the first night I did peppers and oninion

    second night I did carrots and beans

    last night I did brocoli and cauli.

  • James is the same way. Quesadillas are the only way I can get him to eat veggies or meat.

  • might be a silly question, but what type of chicken do you use? Meaning, do you have grilled chicken strips in your fridge on hand or something? or do you cook raw chicken breast every time?

    We do this too.I ALWAYS have those frozen chicken tenderloins, in my freezer.  They take about 5 minutes to cook on the stove.  I cook those, chop them up and add the veggies & cheese.

  • Yup, I got the idea for them on here, and DD loves them.  I make ones with black beans and cheese quite a lot for her, but I've tried broccoli and cheese, and I even grated a little fresh carrot on one of them. 

    MsTammy- every few days I bake some chicken legs for DD, and then put them in the fridge.  That way, we don't have to make chicken for her every single time.
