We have friends staying with us this weekend (they live 2 hrs away and are coming in for our shower) and I wanted something easy. I would typically make overnight french toast but I think I would like to try an egg/cheese/meat/veggie thing maybe.

Ham & Egg Puff Casserole

Here's an easy one that is always a crowd pleaser:
Preheat oven to 350 degrees.
Cook 1lb of breakfast sausage.
Roll out a package of Pillsbury croissant rolls on the bottom of a 13 x 9 inch greased pan.
Top croissants with sausage.
Mix 6 eggs, 2 tablespoons of milk, and salt and pepper (to taste) and pour into pan.
Add 2 cups of mozzerella cheese.
Bake for 30-40 minutes.
Those all sounds super good, here's another one that is REALLY easy...
Preheat oven to 350.
spread 3 c. of frozen shredded hashbrowns into 8" sq. pan.
sprinkle with 1 c. diced ham, 3/4 c. Monterey Cheese (I often use Cheddar), and 1/4 c. green onion (which I don't use!)
Beat 4 eggs with 1 can of evaporated milk, pour over casserole.
Bake for 55-60 minutes or until knife comes clean.
It can be served just as it is, or I've served it with salsa and sour cream.
VERY tasty and easy!!!
Here goes:
Breakfast Egg Casserole:
Ingredients -
1 pkg Jimmy dean pork sausage
10 eggs lightly beaten
3 cups milk
2 tsp dry mustard
1 tsp salt
6 cups cubed bread
2 cups shredded cheese
1/2 tsp black pepper
Optional:
1/2 cup sliced mushroom
1 medium tomato, seeded and chopped
1/2 cup thins sliced green onions
Directions-
Cook Sausage
Combine milk, eggs, mustard, and salt - stir
Put 1/2 bread in 9x13x2 baking dish
Sprinkle 1/2 of pepper, 1/2 of the cheese 1/2 of the sausage and 1/2 of each option ingredient.
Repeat layering, then pour egg mixture over casserole.
Bake uncovered at 325 degrees for 55-60 minutes or until eggs are set.
Hash Brown Casserole:
10.25 oz can of cream of chicken soup (I've used cream of mushrooms when serving this to vegetarians - same difference)
8 oz of grated colby cheese (I frequently use more cheese, and buy the pre-shredded cheddar, because they never have shredded colby at the grocery)
1/2 cup melted butter
1 small onion - minced
1/2 tsp black pepper
2 lb bag of frozen hash browns (I've used both shredded or potatoes O'Brien - either one is good)
Spray 13x9x2 pan with cooking spray
Combine soup, cheese, butter, onion, salt and pepper
Break up any clumps in the frozen hash browns
Fold in the potatoes, gently
Bake in 350 degree oven for 35-40 minutes
