My H suggested just using the first initial (D or M) to honor her- he is Jewish so I guess this is common, but I have a very hard time wrapping my head around that being an honor- no offense to those of Jewish faith, just not what I am used to.
Any opinions/thoughts/suggestions?

I understand where you are coming from. Dh's grandma is Ruth and I adore her so we are naming our daughter after her. I don't love Ruth for a middle name, but the meaning is important so we are going with it. Just using R doesn't seem like it's honoring her so I completely get what you are saying.
I'd use Dorothy or Mae. I actually think Mae is an adorable middle name. ?
i liked Mae and was all for it- but my H HATES it, he thinks it is way too southern/hickish (his opinion- not mine), and that it is one of those names that gets used with the first name a lot- and he just hates it. I don't get it either.
