  • We are having basil chicken with corn, green beans, corn muffins and applesauce. (trying to use up small half bags of frozen veggies so we get two choices tonight!)?

  • turkey chili and honey cornbread

  • We had a risotto with squash, sun dried tomatoes and the last of the dried mushrooms we picked in the fall. And a bread machine bread with fresh herbs and seeds. Mmmm.
  • Bean Burrito Bake (DH's fav)

    • 1 lb. lean ground beef
    • 1/2 packet taco seasoning
    • 3/4 cup water
    • 15 oz. frozen corn
    • 14 oz. can of Rotel
    • 15 oz. can of Fat Free Refried beans
    • 5 oz. tomato paste
    • 2 cups shredded cheddar cheese
    • 4 cups COOKED brown rice
    • 1 medium onion

    1. Dice onion and saute in large skillet with meat, until browned.

    2. Add water and taco seasoning. Simmer a minute or two, until sauce thickens.

    3. Add canned corn, and other canned ingredients.

    4. Spray a casserole dish and fill with veggie/bean/meat mixture.

    5. Top with 1 cup of cheese.

    6. Cover with cooked rice.

    7. Sprinkle remaining cheese on top.

    8. Bake, covered, at 350 degrees for 20 minutes. Remove cover and bake 5 minutes more.

  • Chicken chimichangas from a recipe posted here recently. I'm trying them out. I sure hope they are good!

    spicy beef stew for the adults, meatloaf for ds and dd. Both leftovers from the weekend, with brown rice and a salad.
  • Hmmm, I'm sensing a warm comfort food theme here.  I guess a rainy day will do that!

    You're awesome! I'm making Chick-Fil-A :)  Real healthy huh?

  • Probably Curried Lentil & brown rice.  I'm in a mood and don't feel like cooking much and I can do that in my sleep.
