mix together sour cream, onion and soup. Add THAWED hashbrowns. Mix well. Put in a 13X9 dish. pour melted butter over top. Put cheese on top. Crumble chips and put that on top. Cover with foil. Bake 350 for 45 mins. Remove foil, bake another 15 minutes.
I usually do homemade salsa unless I'm asked to bring a side dish / main dish.
Chopped tomatoes, diced avacados, chopped red onions, diced jalepenos, chopped cilantro, and lime juice. Bagged (or homemade if I have time) tortilla chips. Everyone eats it up.
I often make an easy cheese dip thing for crackers: 2 cups shredded cheese, small package of slivered almonds, 1/2 bottle of those real bacon bit pieces, 3 sliced green onions, mix that all together with mayo until it has a nice smooth creamy consistency and then chill it... I love it on wheat thins, but you could use ANY crackers... It is sooooo good, and people always tell me they love it! (And it only takes like 2 minutes to make, so I like it!
Bake at 350 for 30 minutes in an 8x8 casserole. I just use Corningware, and I always double the recipe. You can add spinach to it if you want, but I never do.
Serve it with tortilla chips/pita chips. People will seriously LOVE you. It's so easy, and I get mad compliments on it all the time!!

This is called Cowboy Caviar or something like this. It's always a hit and you can make it the night before:
1 can diced tomatoes or dice your own
1 green bell pepper diced
1 onion diced
Finely chopped cilantro to taste ( I use about 1/4 cupish)
1 can black beans rinsed and drained
1 can white corn - yellow is fine too drained
1 can black eyed peas drained
1 bottle italian dressing
Put it all in a large bowl, mix and let it sit overnight or for at least a few hours. The longer it sits the better. Serve with tortilla chips.
Artichoke Dip
1 can of artichokes, quartered and drained.
1 cup of mayo
1 cup of parm cheese
a pinch of garlic salt
Bake at 350 for 30 minutes in an 8x8 casserole. I just use Corningware, and I always double the recipe. You can add spinach to it if you want, but I never do.
