BEST potato soup recipe

I've made it a few times, and it's always wonderful.  It was very hard to NOT get a second bowl of it tonight!

4 c chicken broth
4 c potatoes, peeled and chopped
1/4 c minced onion
1/2 tsp seasoned salt
1/2 tsp pepper
8 oz cream cheese, at room temperature, cut into pieces

Boil broth, potatoes, onions, and spices over med-high heat until potatoes are soft.  Reduce heat to low; add cream cheese.  Stir occassionally until cheese melts.  Put about half of the potatoes and most of the liquid into a blender or food processor.  Blend until smooth.  Return to pot and simmer about 5-10 minutes, stirring occassionally.  Serve with grated cheese and crumbled bacon, if desired.

  • That sounds delicious!  Any way to make it without the use of a food processor?  I don't have one...

  • Yes.  Before you add the cream cheese, smash some of the potatoes to release the starch.  Simmer for 10 minutes or so, then add the cream cheese.  The soup won't be as thick, but it will still taste just as good.

  • You could also just use a regular blender. That's what we used to do before we wisely invested in a stick blender (best invention ever).
