A lot of people said Eric Joseph is plain. What does that mean? What can I do to not make it plain? Change the middle name? Or is Eric "plain"?
Edit: Other family names include Geroge, Alexander, Fredrick, Bernard, Xavier, Francis, Garrett, Jacob, Adrian, William and Adam. ?

It's a good name, nothing wrong with it. By plain, I meant that it doesn't strike me as anything special... it has kind a of a "generic" feel to it.
I like the other names you have listed, too (except Jacob - the name itself is OK, but way too common).

My brother and his wife were going to use Eric Joseph if they had a boy (they had a girl). Everyone loved it. I think it's a great name.
I don't think your daughters' names are plain! They are much more classic than Eric Joseph.. It's not a bad name, those names are just pretty common boy names.
Maybe it's the lack of "y"s. Eryc Josyf. Makes all the "plain name yuck" people happy, and guarantees your son will only know 1 or 2 people who spell it the same "unique" way.
