I walked A last week in -5ish for about an hour. It was cold and it's always super windy here, but I have one of those BundleMe-type things I use in the stroller (NEVER used in a carseat) and I took an afghan and folded it up and tucked it around him. I kept checking, and he stayed pretty warm.
We're to the point now where it's not below zero after about 11am, so I'm usually not too worried about taking him out.
If I have to go somewhere, even if it's super cold, I just bundle him up in his snowsuit, put the plastic cover over the stroller, shove some blankets on top of him too and he's always fine. I don't have access to a car during the day (I live downtown Toronto) but I can walk a lot of places to get stuff so I have to take him with me. If it's -20 or something I wouldn't venture outside, but when I had to go to the doctor the other day it was super cold out and I just had to take him. He was fine. The plastic keeps the wind off of him nicely and his snowsuit actually leaves him sweaty so he's perfectly fine.
It's actually nice to get out of the house. Although I have to admit that I much prefer when it's above 0 and I don't have to bundle him up as much. He doesn't like being so bundled and really enjoyed yesterday being free and clear with only a spring coat on instead!
