Must Try Recipe..

It is so easy and delicious. I tried it at HEB and made it for dinner last night and my pick DH loved it.

Artichoke and Lemon Chicken

2 T. Canyon foods Artichoke and Lemon Pesto

1 lb Chicken cut in the 1/2 inch cubes

salt and pepper to taste

1Tblsp olive oil

1/3 heavy cream

1/2 tsp lemon juice (I used all the juice from a small lemon)

2-3 artichokes in a jar

Directions:

Heat oil in skillet and saute the chicken cubes (sprinkle with salt and pepper first). Cook until done. Remove chicken to plate. Add in remaining ingredients. whisk to combine bring to a simmer. add in chicken and serve.

    Does the pesto they recommend spoil fast or is a "multi meal" jar? Is it something you can sort of keep on hand?

    Sounds YUMMY! What did you serve it with?

     What to do with the extra heavy cream... Hot Chocolate maybe?

    I have another recipe I am going to use the extra cream in so if it is good then I will post it on here too. As for the pesto it comes in a jar and just has an expiration date of 2/2010 on it so I dunno about that one. I just refrigerated it after use.
