It is so easy and delicious. I tried it at the grocery and made it for dinner last night and my pick DH loved it.
Artichoke and Lemon Chicken
2 T. Canyon foods Artichoke and Lemon Pesto
1 lb Chicken cut in the 1/2 inch cubes
salt and pepper to taste
1Tblsp olive oil
1/3 heavy cream
1/2 tsp lemon juice (I used all the juice from a small lemon)
2-3 artichokes in a jar
Directions:
Heat oil in skillet and saute the chicken cubes (sprinkle with salt and pepper first). Cook until done. Remove chicken to plate. Add in remaining ingredients. whisk to combine bring to a simmer. add in chicken and serve.This discussion has been closed.

Our grocery store has it by the food center by the imported cheeses and seafoods. It's a specialty item so it has a display on the "chef's center" in our grocery store.
