  We have a compost bucket with a lid that stays in the kitchen.  All raw scraps (excluding any meats, limes, fats/oils, etc) go in the bucket and then goes to our compost pile outside.  Because our compost is right on the ground, all we do is aerate the soil every so often and the worms do their work.  If you have your compost in a bin I know you have to have worms in it.

  You need to make sure you have half brown material(dead plant material like leaves, paper, etc) and half green material (fresh/wet material like fruits, veg, tea bag, etc)  We used to compost in the ground and it worked fine but now we have an enclosed tumbler and find it easier.  It also produces usable compost faster.  Really it's not too hard and it makes for fantastic fertilizer if you garden.  HTH
