I was just going to post this, might as well hop on this thread...
HOTDISH! ;-) Lately I've been taking the squash, defrosted veggies, fresh veg, whatever... and throwing it in a batch or (organic) Mac&Cheese with a can of tuna or some shredded chicken. Portion it up, freeze some and voila! and easy meal that has a little of everything hidden in cheese. Works great for us!
But to answer your question, I do veg twice and fruit only once, depending on her poops. If she's constipated or a little too firm, she gets grapes or mandarin oranges or something for a snack, too.
our list of staples for any meal:
cottage cheese, cheese chunks, toast, muffin, oatmeal, yogurt, fruit, veg (I do alot of squashes) one of those rotissory chickens (man, we eat that for a week then I make stock from the bones), nutrigrain bars, newtons, ritz, peas, edamame, mix veg... um, sure there's more.

I also do more fruit in the morning and more veggies at night. At lunch I do a dairy and a grain normally... grilled cheese. I cut up deli turkey and give him that with crackers and cheese and a yogurt. I also give a fruit- like kiwi or grapes. I'm not sure how much finger foods your girls are doing let me know and I can try to think of more things for you. Lunch for sure was the hardest until he was eating mostly finger foods.

I do fruit and cereal for breakfast, veggie and cereal for lunch and then meat/veggie/cereal for dinner.
My girls get some Gerber puffs after their meals, but that's all the finger foods they're doing so far. Are your girls doing finger foods or just purees at this point?
I tend to make the same stuff for lunch and dinner, but here are some of their entrees that they eat pretty often:
Grilled cheese Cheese quesadillas Cheese pizza Veggie chicken nuggets Veggie burgers Spaghetti Pasta alfredo Pasta w/ ricotta and cheese (I do this instead of mac and cheese) Soup with the broth drained off Omelets with cheese and veggies Oatmeal w/ fruit mixed in Hummus and pita Open-faced fried egg sandwiches Peanut butter and honey sandwiches (open-faced) Risotto w/ veggies and cheese mixed in
They have fruit with all three meals and veggies with lunch and dinner.
They generally have either pancakes, waffles, scrambled eggs, cereal, or baked french toast with fruit for breakfast. Lunch and dinner always include cheese, fruit and veggies, and often include yogurt, too, if their entree is low in protein. HTH!
