mac and cheese debate....clicky poll included. IMPORTANT!

i'm making homemade mac and cheese to bring to a dinner tonight.  I've always made it without eggs before..but I was looking at recipes and a lot of them have eggs....what do the eggs do to it and should I try it???

  • I guess the eggs would make it a little lighter, but personally, I don't mess with mac 'n cheese - it is perfection the way it is!

  • Really????  I have never seen a Mac & Cheese recipe with egg in it.  Weird.....

  • I voted w/o because I have a great recipe for baked mac and cheese that doesn't use eggs.  I have also made PattiLaBelle's mac and cheese recipe that calls for eggs and that was good too.  They don't make it taste lighter.  I think eggs are used because its hard to keep the cheese creamy w/o them.

  • I imagine the eggs serve the purpose of binding in the recipe.  You know, like meatloaf.  The eggs are in there to help bind it all together.

    In researching recipes, I would go with what gets the best reviews overall; eggs or not.

  • And the purpose of eggs in baking is sometimes for leavening (not the case in mac n cheese, I don't think), but also for making the batter smooth.  I could see them being used for that as well.

  • Eggs will hold it all together.  So if you don't want a 'mac & cheese loaf" then go for the recipe without it.

  • ok..I'm going with NO eggs...the recipe I am looking at that is rated high has eggs, but a TON of the comments say they made it without the eggs....plus, the ones with eggs need to cook/bake a LOT longer and I don't want to wait THAT long!  lol

  • and you "box" mac and cheese people don't know what you are missing!!!!!  Its not hard to make "real" mac and cheese!!!!

  • Eggs just make the sauce thick and rich - just like the eggs in alfredo sauce do.

    I'm too lazy to bake mac and cheese, plus SS wouldn't eat it, he doesn't like the crunchy casserole top.  So we make Alton Brown's Stovetop Mac-N-Cheese. To.Die.For. (um, just leave out the hot sauce and leave out the dry mustard unless your cheese is really bland)
