? Bakers: Banana/Carrot Bread

I have some very rip bananas and would like to make banana bread... I modify the recipe to make it healtier for DD (cut some oil and replace with apple sauce, whole wheat flour).  Anyway I was thinking of adding shredded carrots... what do you think?  Thow them in and see what happens?

  • I made some applesauce muffins from Deceptively Delicious and they had pureed carrot in them. You couldn't taste the carrot and  I think it made them more moist.  I say go for it.

  • Do you mean freshly grated carrots, or packaged pre-shredded carrots?

    Freshly grated carrots add moisture, just like bananas do, so if that's what you're using, I'd substitute some shredded carrot for some of the mashed bananas. If you're using pre-shredded carrots, you could probably just stir them into the batter.

  • Yep, just add them in!  The amount of banana + carrot should equal the amount of banana called for in the recipe.
