Side dishes when you grill out...

We just bought a new grill earlier in the week so DH could take our old one to work for him and the guys to use for lunch. So I want to go stock up on grillables this weekend and get some steaks, chops, hot dogs, chicken, etc, but I never know what to make as a side dish. I don't wan to just have oven fries all the time. Sometimes I'll cut up zuchinni and sqaush in a tinfoil packet and cook it on the grill, but other than that and corn on the cob, I'm at a loss when it comes to good veggie sides other than potoatoes. Also, I don't like any kind of peppers or onion, so that kind of takes away the shish kebab idea which would otherwise be great.

What do veggie sides do you make when grilling out?

  • I love bbq baked beans. They always work well with grilled foods in my opinion. Especially burgers!  We keep the side dishes simple when we grill. I may even just do a nice crisp salad and then 1 other thing on the side.

  • I know you said not potato dishes but I have been craving potato salad all week. Yummmmmmmmmm!

    In the summer we make a lot of tomato salad's (Cut up fresh tomatoes, onions (optional) and vinegar and oil)

  • Asparagus  with hollandaise sauce is my all time fav! We do a lot of baked potatoes too. I love easy sides to like Baked beans with bacon on top, macaroni salad and italian potato salad!
  • you can spray the grill with non stick spray and grill the zucchini and squash on the grill then while they are still warm put s&p, some olive oil and a little balsamic vinegar.  You can make roasted potatoes on the grill and season them with different things ie seasoning salt, some garlic and s&p, or rosemary and s&p.  Other than veggies or potatoes I'm out of ideas, maybe macaroni salad?

  • Chips usually go well with hamburgers and hot dogs.

  • mac & cheese, pasta salad, regular salad, grilled corn on the cob, baked beans, potato chips, you can also do baked potatoes on the grill (i slice them and put butter on them, wrap them in tin foil & throw them on the grill), fruit salad, deviled eggs
  • We take a red onion and slice it, put a little extra virgin olive oil on it and grill, we also cut up mushrooms and throw in tin foil and grill.
  • put the zucchini and squash right ON the gril... so much better than tin foil. Just rub down the grates with olive oil.  Delicious!

     Eggplant grilled the same way is also wonderful.

  • I love roasted veggies, vegetable pasta salad, and broccoli, rice and cheese casserole.

  • I use a BBQ Pan like this one:

    I mix all my veggies together (sweet pepper, carrots, celery...) with a little honey and olive oil, add a little seasoning, and then I just throw it all in that pan and I cook it on the grill... Yumm!!!

  • Corn on the Cob is an absolute must when Husby and I grill out.  We use our BBQ 2-3 times a week and you can bet there is always either baked potatoes (sweet and russet) or Corn on the Cob on the grill with the meat...  MmMmMmMm i do believe we will now be grilling steaks and corn tomorrow night :)

  • I slice veggies about a 1/4 inch thick (squash, onions, eggplant, green onions, asperagus etc). I also like to use big mushrooms. They absorb the flavor very well. I put them in a gallon bag with red pepper flakes, terriaki, crushed garlic and olive oil. Let them sit for an hour or two - tossing the bag occasionally.

    Grill.

    Mmmm.

  • Pesto pasta salad is a great accompaniment, and also corn/avocado/black bean salad. Yum!

  • I now want to grill out and ours grill is broken! Thank you to our wonderful one year old lab puppy who chewed up our grill cover and a hose that is conected to the gas tank. We'd replace them both but he'd do the same thing.

    I think it's time to go to the parents house for a bbq!

    Also, I agree with PP about grilling the veggies, baked beans, pasta salad, salad, etc. However, my thing lately is potatoes. I love taking red potatoes, cutting them into wedges and adding olive oil, minced garlic, s&p and chives or parsley and baking is a really hot oven until they are tender and have a golden crust. So good!

  • For grilling veggies, we usually do: mushrooms and onions (you can fine dice them), corn on the cob and asparagus.

    For regular sides: mac and cheese, spinach dip, pasta salad, chopped salad and baked potato

  • Instead of fries or potatoes, we usually like to have rice or cous cous as a side.  Really, almost any veggie can be done on the grill.  I usually don't like plain onions and peppers either, but if you marinate them in some balsamic vinegar, then grill them, they turn sweet.  I really love grilled onions with a little parm.  cheese on them! 
  • Marinate zuccini in olive oil, lemon juice and garlic then throw on the grill.  Then put fresh grated parmissan cheese on top.  Mmmm Mmmmm 
  • Someone mentioned eggplant - I actually just took a cooking class and in the grilling section we grilled eggplant directly on the grill. We sliced it into about 1/4" thick disks and put it directly on the grill. I believe we brushed the grill with oil beforehand. I

    I live in an apartment, so don't have that luxury - would be nice to grill up some steaks or burgers, you're lucky! Enjoy your new grill!

  • We do grilled corn on the cob, potatoes cut up with onion and butter in tinfoil, potato salad, I also like red potatoes cut up tossed in ranch with cheese and bacon, baked for about 45 minutes. We also do a lot of baked beans. Sometimes I just do them on the stove and add syrup and brown sugar and mustard. Sometimes I do a bunch of different beans and add ham, bacon, and such and bake them.

    We just got a new grill yesterday too and had country style short ribs last night with beans and corn on the cob. We are grilling out all weekend I think lol.

  • I love salad with grilled chicken, mmm.

    We also grill zucchini, bell peppers, and sometimes corn on the cob.

    My mom used to grill some tomoatoes, chop them up, then puree them with some basil and make a soup-like dish that was good.
