Quick dinner ideas...

Hi Ladies;

What yummy quick meals do you make on the week days?

It seems from reading other posts that I am the only person on here that takes about 1 hour to make dinner. I guess I am not taking advantage of already prepped meals.

Any suggestions are appreciated. :)

    Casseroles, that you can get 2 meals out of

    Crock pot chili 

  • Calzones or pizza - buy pre made dough at the grocery store and assemble at home (you can get wheat dough, low fat cheese, tons of veggies - can make them pretty healthy)

    One of our favorites is marinated steak and veggie kabobs over rice - also works well with chicken

    Pasta - a lot of times I will prep things like baked ziti after dinner so it just has to be popped in the oven when I get home from work

    Tonight we're having chicken broccoli alfredo - brown boneless, skinless chicken, cook some frozen broccoli, make some quick alfredo and toss all together over pasta

    Tacos

    Sandwiches - tuna, chicken salad (I'll boil some chicken tonight while I am making our dinner so it'll be ready and cold for tomorrow night)

  • Spag and meatballs (with frozen meatballs), quessadillas, grilled porkchops, English Muffin Pizzas, grilled chicken and grilled steak, burgers and hot dogs, rotisserie chicken from grocery store - these are all toddler approved and super fast.

  • Spaghetti with meat sauce

    Baked potatoes topped with chili and cheese

    chicken taco salads (pre cooked chicken from Costco)

    hamburgers with sweet potato fries

    tilapia with peach salsa from Trader Joes (put taco seasoning on the fish, pan fry and top with the salsa) side of avocado and rice or cous cous

    Costco also sells packages of single serving salmon that are easy to cook up.

    Make ahead meatloaves for the freezer. Defrost and serve (I make them in muffin pans so they're easy to defrost)

    BTW -  Sunday night I prep the crockpot with Monday/Tuesday night dinner (leftovers on tuesday) which helps a ton. 2 nights of easy meals

     Slow Cooker Pot Roast:  Put veggies (potatoes, carrot, onion, etc) in bottom of crock pot.  Mix one can cream of mushroom soup with Lipton onion soup mix, add some chopped garlic, and Lea & Perrins.  Add chuck roast to crock pot and pour soup mixture on top.  Cook on low all day.  Add steamed rice and a green salad when you get home.

    Spaghetti, green salad, green beans, and garlic toast.

    Turkey Burgers and Baked Sweet Potato Fries.

  • This isn't really what you asked, but I do all my cooking on weekends.  I make 2-3 meals and we just rotate them throughout the week.  The last thing I want to do when I get home is make dinner. 
  • Hi There- once I went back to work I found this great site www.menus4moms.com. Every Tuesday I get an e-mail with a Meal-Plan and Grocery List for the upcoming week...most recipes are easy breezy, quick prep, minimal ingredients...and I haven't had a bad recipe in it...If you don;t like what your mealplan looks like for the upcoming week you can search their archive for a plan that better suits your tastebuds.

  • We do a combination of casseroles, crockpot meals, quick meals etc.

    my casseroles are all in one ie tator tot casserole (tator tot, grnd beef, cream of something, mix veg + puree veg)

    Broccoli rice casserole - frozen chopped broccoli, cream of mushroom, cheez whiz, rice.

    crock pot meal:

    frozen chicken, cream of mushroom, 1 cup of salsa and taco seasoning (low sodium)

    chicken with pasta sauce, boil the pasta ahead of time.

    Other quick stuff, make the night before just heat up. at least make the starch the night before, those take the longest.

  • My DH BBQ's the meat (chicken breasts, pork chops, steak...whatever) - and we live in Canada so no excuses for the cold!

    I use my microwave to almost cook potatoes (4-5min) and then finish them off on the stove/oven/BBQ depending on whether we want them mashed/roasted/baked.

    This with either a boiled veggie (corn, peas, carrots, beans..whatever), veggie stir fry, or salad is our usual meal.

  • We just started doing "weekly cooking" on the weekends and it is working really well for us! We plan out our menu and cook 4-5 entrees/sides in one day. I bought 20 gladware storage pieces (10 for breakfasts and 10 for lunches). I pack up yogurt and blueberries and we bring a bag of Kashi cereal to work with us for breakfast. Pack the lunches, then use the rest for dinners throughout the week (we order out on Friday evenings). It makes the evenings and mornings so much easier on all of us.

  • I make a lot ahead of time on the weekend.  If I'm cooking on Sunday night I cook extras and sometimes make 2 entrees with double portions.  I freeze a lot to reheat during the week.  On Tuesday we're now having breakfast for dinner.  The kids love it, it's easy and it's super cheap.  I slide in some veggies and serve with fruit to keep it healthy.  Thursdays are soup and sandwich night.  So, I really only cook a couple nights a week.  Big Smile

    I use my crockpot A LOT!  My favorite thing to do is to put chicken in a freezer bag (any cut of chicken) with some marinade and cook it in the crockpot with rice.  When I get home I steam some veggies in a microwave steam bag and dinner is done. 

    Also, if we are ordering chinese food I always order an extra quart of white rice to throw in the crockpot so I don't even have to pre-cook the rice.
