I know this kinda sounds like a dumb question, since they sound like they'd be easy to make. However, I've never made them and was craving them last night but didn't know where to begin! Anyone have a good recipe for chicken nachos?
I would cook a couple chicken breasts and shred or cut them up, put a bunch of chips (the big, thick kind so they hold up to the mess you're about to put on them) on a baking sheet. Put on the chicken, maybe some black beans and corn, pico de gallo, and cheese and put under the broiler a couple minutes to heat it all up. But that's me, I'm sure you'll get some more creative options.
If it were me (and I'm the laziest person in the world), I would get some frozen pre-cut boneless chicken, and cook that according to the package directions. Then I would just get some Tostitos chips and put the chicken, sour cream, salsa, black olives, and whatever kind of cheese you want on them. Most people like them with lettuce and tomatoes, but I don't really care for either, so I leave them off.
