Looking for a chicken stew receipe

Do you have something you recommend?

DH and I have been trying receipes from the crockpot word document I got from another nestie and have found a few good ones. Just looking for some more variety for dinner.

  • Adults only says coq au vin to me. Chicken, mushrooms, onions, red wine, chicken broth, carrots, celery and garlic.

    Other than that, my typical chicken stew is chicken, potatoes, pearl onions, peas, carrots, then I thicken the chicken broth with a roux. Yum.

  • I had to go look up the recipe for the exact ingredients. When I make it I don't use the tomatoes (I don't like them...ick). I have also used a bag of frozed veggies (corn, greenbeans, peas, potatoes) instead of just the corn. I also dice up my chicken before putting it. I reduce the cook time to 7-8 hours instead. It also depends on how hot your crockpot gets. I also add shredded mont/jack cheese to the top when I put it in a bowl. 

    • 16 oz baby carrots (chopped)
    • 1 onion (chopped)
    • 3 cloves garlic
    • 1 tsp garlic paste OR 2 cloves garlic, minced
    • 1 cup medium pearl barley
    • 3 frozen boneless skinless chicken breasts
    • 4 cups chicken stock
    • 1 cup water
    • 14 oz can diced tomatoes with roasted garlic, undrained
    • 2 cups frozen corn

    Combine all ingredients in crockpot. Cover and cook on low for 7-9 hours until chicken and vegetables are tender. Remove chicken from crockpot and cut into 1" pieces. Return chicken to crockpot. Serve topped with sour cream.
