FIL has been a butcher for decades so I trust him - the brown just means it has been exposed to light & oxygen and is only on the surface, has no impact on whether it's bad or good. If it stinks and is turning OTHER colors, throw it out before it walks by itself ;-)

it goes in the fridge from the freezer, so it's frozen still.... But I start counting days the day it goes in the fridge...1 wk from then and it's tossed out automatically.
If it smells normal it's fine. If it smells weird throw it out. I've had beef turn brown on me and almost threw it out but my Mom said that the color does not mean it's bad and I would have thrown out perfectly good meat!
Yeah I have heard a lot of places put dyes in their meat anyways, so you can't really trust the color thing. I keep lunch meat about 3-4 days (turkey and ham 3...others 4; pepperoni...does it ever go bad?) I go with the smell and overall appeal of the meat
A lot of beef (and fish) is treated with Carbon Dioxide which keeps the meat pink even if it has started to turn - so you really can't go by the color. The smell test is best.

mine starts turning brown/grey after its been in the fridge about a week... is there a time limit on how long it can be in the fridge?
