Budget Friendly Veggie-Chili

2 15oz cans pinto beans

1 16oz can kidney beans

1 15.5oz can hominy

1 15 oz can chick peas

All of the above drained and rinsed

1 28oz can crushed tomatoes

1 6oz can tomato paste

1 4 oz can chopped green chilies, undrained (I used diced, couldn't finr chopped)

2 small zuchinni, halved and thinly sliced

1 med onion chopped

 1.5 to 2 cups water

1 to 2 tbs chili powder

1 tsp ground cumin

1 tsp salt

1/2 tsp garlic powder

1/2 tsp sugar

Put it all in a pot, bring to boil. Reduce heat and cover. Simmer for 30-35 minutes. Add cheese and eat.

 SOOOOOOOOOO EASY and CHEAP. I probably spent less than $10 on the whole thing. Very yummy too. I just made up a big pot for work lunches and I'll probably freeze a jar or 2 as well.

Next time I think I'll add corn too.

  • After reading this - I can't wait to try zucchini in my chili next time!

    We don't eat canned food at my house any more - so over the weekend when I made chili, I cooked up beans from scratch (dried) for the very first time.  They came out great!

  • Yeah, I'm sure that would work just fine too. Just cook them all first and then add your other ingredients.
