Have you looked at American Girl? They have baby dolls and American girl dolls that come in different colors. One of their characters, Josefina, is Hispanic.
They are pricey though.

ditto. i too find many options once we're in that i want a doll that potties stage (bleh!!). but for now i wanted one that can coexsist along side her FP brown skin brown hair and blue eyed blond haired "Baby's First" soft squishies.
Yeah, I'll take a BIG FAT PASS on American Girl dolls. and Yeah, Josefina is not Mexican...she is New Mexican...whatever that means.

You did help! I just looked at the details for Josefina, and she's adorable -- the line is supposed to be "American" girls, so it wouldn't make sense for her to be Mexican, and I think they just meant to imply that her family now lives in New Mexico, with Latin heritage. Perfect for us.

In college I worked for American Girl customer service, and I think OP might've been referring to the "just like you" dolls that come in several variations. (Obviously, they don't come in every variation of human possibilities.) They also have "Bitty Baby" versions of the "just like you" dolls.

DD's favorite "doll" right now is a frog. It looks nothing like her, but she seems to be fine with that!

I love American Girl dolls! They can be so educational, and are better role models than Hannah Montana/Miley Cyrus.
