What are your favorite healthy dinner ideas?

Links to the recipe if you have them would be greatly appreciated- we HAVE to start better eating for dinner!

  • Some of my fav's are from Campbells soup website. They have the nutritional info too. The Chicken Divan is awesome.

  • hmmmm... can't do much for links b/c i kind of just throw most things together some of our "go to" dinners are:

     - chicken piccata - pound boneless skinless chicken breast thin & saute in just a bit of olive oil. take out of the pan & into the pan add a few splashes of low sodium chicken broth, a dash of white wine, a big ol' squeeze of lemon, and just a tiny little pat of butter. you can also add chopped parsley & capers if you got 'em but most of the time we don't.  put chicken on plates and drizzle sauce over top.  serve with steamed veggies.  yum.

     - spaghetti w/ homemade tomato sauce (sometimes with extra lean ground beef or ground turkey breast added) & whole wheat pasta - salad on the side

    - stir fry (we have a million different versions of this - chicken breast, lean beef, tempeh, all veggie, etc - just depends)  I just mince up garlic & ginger really small, saute in some olive oil, toss in protein & cook till done.  take out the meat/protein - add a tiny bit more oil to pan & throw in veggies (thin sliced carrots, bean sprouts, broccoli, zucchini, cauliflower, water chestnuts, bok choy, etc).  cook em up a bit, add back the meat/protein.  then I make a little sauce with soy sauce, white wine vinegar, & honey - mix it in with the veggies & meat and serve over brown rice.

    - in the spring and summer we just grill all.the.time. - seriously like 6 nights a week.  we just have some kind of lean meat (mostly chicken breast that has been marinated different ways - rosemary & garlic, italian dressing, soy sauce & ginger, etc).  and then have it with salad and bread or grilled veggies.

  • One thing we have been doing is changing up our quick meal of spaghetti or pizza to whole wheat spaghetti and whole wheat bobili to make it healthier.  We also have been eating a lot of tuna on wraps with fresh veggies.  I love Cooking Light's quick meals.  Those are a staple at our house!

  • Our favorite meals are seafood things

    -grilled tilapia, baked potatoes, and fresh veggies.  DH does the seasoning so I couldn't tell you what he puts on the tilapia

    -crab cakes, brown rice, and fresh veggies.  Cooking Light has a recipe for crab cakes that's healthier than ours.  We use mayo as our binding agent... so it's not as healthy

    -shrimp, rice, and veggies.  I cook the shrimp in olive oil, and I season the shrimp using a flour coating with different spices mixed in-- basil, italian seasoning, course grind pepper, and whatever else strikes me at the moment.  I heat the oil and put a tad of garlic in the oil with it.  I then cook the shrimp on med low until they're slightly browned. 

    (Sense a pattern?)

  • some staples in our house: chicken (marinated and grilled), salmon (mrinated or just a bit of evoo salt & ppr and baked or grilled), microwaveable sweet potatoes and frozen veggies.  All of these are very healthy, easy to make and good to have on hand for quick weeknight dinners
  • Hannah I want to have dinner at your house.  It sounds really good!
  • I just try to serve a variety of lean meats throughout the week.  I always be sure to pair with 1 starch and lots of fruits & veggies.  DH is a meat and potatoes kind of guy so it's been challenging.  But he's coming around!  I like kraftfoods.com.  They have a "healthy" section.  But you have to be careful because a lot of those recipes still call for packaged things that can be high in sodium.
