NBR: Can I have your fav easy (and yummiest!) recipes?

In dire need of ideas since we have been eating freezer meals for a month and I am attempting to cook this week. TIA!

  • Some of my quick and easy (and healthier ones) since I have 3 kids need to be made in under 20 minutes.

    Chicken Stir-Fry, pasta with broccoli and turkey sausage (evoo too), beef stew in the crockpot, baked salmon w/asparagus or broccoli and rice,  frozen cheese raviolis w/green beans, black beans and rice with salad, hamburgers on the forman grill w/sweet potato fries.

  • Cheeseburger Sandwiches

     

    1 ? pounds lean ground beef

    ? teaspoon garlic-pepper blend

    1 (8 ounces) package pasteurized process cheese spread diced (2 cups)

    2 tablespoons milk

    1 medium green bell pepper, chopped (1 cup)

    ? cup chopped onion

    2 garlic cloves, minced

    8 sandwich buns split

     

    1. In large skillet, cook ground beef and garlic-pepper blend until beef is thoroughly cooked, stirring frequently.  Drain.
    2. In a slow cooker, combine cooked ground beef and all remaining ingredients except buns; mix well.
    3. Cover, cook on low setting for 6-7 hours.  Spoon beef mixture into buns.

     

    Chicken Breast Bundles

     

    2 tablespoons butter

    4 boneless skinless chicken cutlets cut into small pieces

    Dash Pepper

    1 can crescent rolls

    1 container gourmet spread able cheese with garlic and herbs

    1 egg, beaten

     

    Preheat oven to 375 degrees.  Lightly spray cookie sheet with cooking spray.

     

    Melt butter in large skillet over medium heat.  Sprinkle chicken with pepper, add to skillet.  Cook 8-10 minutes or until cooked. 

     

    Separate dough into four rectangles.  Firmly press perforations to seal.  Spread cheese evenly in center of each rectangle, place chicken on top of cheese, wrap dough around chicken.  Press seam to seal.  Place on cookie sheet.

     

    Bake 18-22 minutes or until deep golden brown, brushing lightly with egg during the last five minutes of baking. 

     

    Hamburger Casserole

     

    1 pound lean hamburger meat

    1 ? teaspoon salt

    1 tablespoons sugar

    ? teaspoon garlic salt

    2 cans tomato sauce

    ? pint sour cream

    1 ? cups chopped onion

    3 ounces cream cheese

    2 cups shredded cheddar

    Egg Noodles

     

    Saut? onions and hamburger meat together.  Brown meat thoroughly, add tomato sauce and simmer for 20 minutes.  Add sour cream and cream cheese to meat mixture.  Stir and cook until cream cheese melts.

     

    Cook and drain egg noodles.

     

    Mix noodles and sauce with meat together and pour into a casserole dish.  Top with shredded cheddar cheese.

     

    Bake at 350 for 35-45 minutes. 

     

    Pulled Chicken Sandwiches

     

    4 skinless, boneless chicken breasts halves

    Salt & Pepper

    1 onion, finely chopped

    4 cloves garlic, finely chopped

    1 1/3 cups barbeque sauce

    ? cup apple cider vinegar

    6 Kaiser Rolls

    1 ? cups shredded Monterey Jack cheese

     

    Season the chicken with salt and pepper and place in a heavy pot with the onion, garlic, and just enough water to cover (about 1 ? cups).  Add the barbeque sauce and vinegar and bring to a boil.  Reduce the heat and simmer until the chicken is cooked through, about 15 minutes.  Remove the chicken from the sauce and shred with two forks.

     

    Boil the sauce, skimming occasionally, until reduced by half, about 15 minutes.  Season with salt and pepper.  Add the shredded chicken and heat through.  Spoon the mixture onto the rolls and top with the cheese.

  • Rice & Beans

    1 cup rice

    2 cups water

    1 cup salsa (at least medium, mild will have no flavor)

    1 can black beans (drained)

    Frozen corn to taste (approx 1/2 - 1 cup)

    Dump everything into a pot and bring to a boil. Turn down the heat and let simmer until the rice is fully cooked, about 15-20 min. Serve with shredded cheddar cheese and sour cream (optional).
