DH and I recently got a Nikon D60. We used our tax returns, it was on sale, and we wanted a nice camera to take baby pics with. However, neither of us can figure it out lol. It's a monster. We can point and click but that's about it.?

Are there any good educational books or materials that would teach us amateurs how to use this camera? The instruction booklet it came with confuses me in some areas...?

DH says there's a line of guides that translate the manuals into plain English.
"Magic Lantern Guides" and they're specific to each camera and should be available on amazon.
He also says if you want to email him with specific questions he would try to answer them for you. He's good like that.
there's alot of great websites out there. See if there are any classes offered in your area as well. Some community colleges/centers offer Digital SLR classes. There's also the "dummies" books. 2nd website posted below.

Once you figure out the basics, I would recommend Understanding Exposure by Bryan Peterson. Extremely helpful in learning how to use your non auto modes.
I second Understanding Exposure. It's the best 101 of photography. If you want to learn more on your camera specifically, get this DVD for your D60 from Blue Crane Digital!
