I'm sick of buying animal crackers or other similar snacky foods, so I made up some myself! I cut them into strips instead of the typical animal shape (I don't have teeny animal cookie cutters and strips fit great in toddler hands!). Here's my recipe, if you're interested!
1 1/4 c flour
1/4 c sugar
1/4 c brown sugar
1/2 c (1 stick) butter, softened
1 tsp vanilla
1 egg
1 tsp lemon juice
~1 1/2 tsp cinnamon
pinch salt
In a mixer, cream butter and both sugars. Add the egg, lemon, and vanilla - beat until a bit fluffy. In a seperate bowl, combine flour, cinnamon and salt. Slowly incorporate the flour mixture into the sugar mixture until a dough forms. Cover and chill for at least an hour.
Preheat oven to 350. Roll dough to about 1/4 - 1/2 " thick. Cut out shapes OR cut into squares/sticks/whatever. Bake for about 10 min. The cookies are delish and a big hit with Jude! Next time, I'll probably double the recipe.
