I have taken to spraying a small bowl with pam or something, pouring in some egg beaters, putting the eggs in the micro with a little dried oregano, pepper and kosher salt then letting it go for about 2 minutes. I have been trying to keep sauted veggies in the fridge. I put some of them on top. A spoon of l/f sour cream, hot sauce and I am in heaven. When I am feeling extra frisky I like to mix rinsed black beans and white corn in with the sauted onions and peppers. Black beans are one of my favorite things.
All of the above fits in a cute little mini-pyrex bowl for easy heating at work. Crazy low points, low fat and good fiber from the veggies and the beans.
