I don't have a ton of experience with landscapers/tree guys, but this guy requested that we pay him in cash. He said he'd have his paperwork/insurance stuff when he comes to cut down the tree. Is the cash thing weird or typical?

I would say typical, this way he dosn't have to claim it...
BIL owns a landscaping company and lurves when people pay him cash...
Pretty common. But before he does any work for you make sure he's bonded, etc., etc. if that's important to you.
And, fwiw, like everyone is saying he wants the income without having to pay taxes on it so if you or your DH work in a field where that might cause problems for you down the line I'd consider that too.
