If so, do you have a recipe? I'm DYING for cookies right now, but I know if I make the ones I want, I'll end up eating more than half of them, and that just won't help me lose this ass.
I make those pumpkin cookies that you posted about w/ low fat yogurt instead of oil and take the egg yolk out, only using the white. If I remember it right!
Or you could make a half batch, freeze half the dough, only making a quarter of the recipie.
I take the opposite approach. If I make a "healthy" cookie, I'll eat half of them by rationalizing that they are healthy, so it's ok. Plus, my craving isn't really satisfied, so I end up eating more of them. Instead, I make really rich ones that are exactly what I want. I can have just one, and then I can be done. Sending them to work with dh helps too
I make some with oatmeal and cranberries/dried fruit. There is only a stick of butter and very little flour. The receipe is in a cookbook, but you could probably google similar ones. It still has calories, but at least it has a lot of fiber and nutritional value.
I make oatmeal raisin cookies. the recipe is on the quaker oats box, but you can google it. I think that they are pretty healthy for cookies and the oatmeal and raisins are good for you.

Christmas 2011
this isnt healthy healthy but I think its better than regular cookies!
I cup peanut butter
1/2 cup sugar
1/2 cup splenda (or you can do all sugar)
1 tsp vanilla
1 egg beater
There is no butter or flour and lots of protein from the peanut butter! plus it takes like 5 min to make!!
I mix it all up and put spoonfuls on ungreased cookie sheets for about 12 min (sometimes i add in some oats or choc chips!)
