NBR; can you help me with Mexican theme ideas?

i am hosting my friend's book club on Thursday and for a main course I am doing a fajita bar

 

I am going to do the fajita bar, homemade guac, and them i am at a loss

any good appetizer ideas?

there is one vegetarian-  is black beans a good enough options, or do i need to spice it  up and add stuff to them?

any good dessert ideas?

  • You could do black beans or vegetarian refried beans and maybe add in some rice.

  • The best mexican appetizer is Nachos! Even great for the vegetarian!
  • They have fake ground meat which is perfect for this.  It is called Gimme lean, or Smart something.  At my store it is located in the veggie section where all the dips and homemade salsa are.  You could cook some of that with taco seasoning.  it is good actually.

    As far as dips or desserts...the only dessert I ever see at mexican places is icecream!  key lime pie or something along those lines would taste nice and FRESH after eating all that HEAT though.

     

  • Do queso/cheese dip or salsa.  For dessert you can make sopaphilla (sp?) cheesecake.
  • You could make a 7-layer bean dip or queso for an appetizer.

    Sopapillas or churros are dessert options.

  • For an appetizer you can do a dip. Mix up a block of cream cheese with taco seasoning and spread that out on the bottom of a serving dish, top with lettuce, tomato, sliced olives and shredded cheese. It's easy and delicious.

  • Tres Leches cake!!

    I did a study abroad in Mexico for a semester and couldn't eat anough of that stuff. You could also do a salsa bar with all different kinds (pico de gallo, salsa verde, hot and mild salsa...)

  • Oh there are so many wonderful mexican dips you can make. If you are looking for a vegitarian dip take sour cream and cream cheese and mix it together with a a packet of taco seasoning. And then layer that in a dish with that on the bottom, then a layer of lettuce, tomatoes and shredded cheese, olives or jalopenos if you want. For dessert I had this apple thing once that was made with tortillas and baked and it was delish. I'm sure if you google it you can find something.

  • chips and salsa would be the most obvious appetizer. You could take it up a notch by doing nachos... maybe some quesadillas cut up into bite size pieces??? For dessert theres a few options if you are willing to order.. there is something called tres leches cake which is basically a white cake with different milks poured over it so its like a wet cake. ( I love it but i have had a few friends who didnt like it.. i think it was the wet part) or you can also do flan which is similar to jello or custard.. there are more desserts but the others i know are pretty hard to make and you can tusually order them.
  • You could do Mexican Cavier (it is a really easy salsa mix, I just google when I need the recipe though, sorry I don't have one!) Quesadillas and just cut them into 6ths then people can eat those as little finger snacks.

    i also think i may try to make churros-  that is if i can make the dough in advance which i don't see why not :)

  • All this mexican food talk is getting me hungry. ?I did a mexican theme spread for my DH's 30th b-day party and here are two ideas to think about:

    I've done tequila lime shrimp ( saute some frozen all ready cooked shrimp with a little oil, some tequila, some chopped fresh cilantro, some chopped garlic, fresh lime juice and salt/pepper to taste). ?It can be a great appetizer or you can use it in fajita wrap. ?

    Corn Salad ( I used frozen corn, cumin, fresh cilantro, grape tomatoes, oil,red onion, red pepper, I think instead of goat cheese I added fresh mozz.) ?Very easy to make . Recipe found on William-sonoma.com ? ?I just saute it all together.?
