Question for a substitution.

I am thinking of making this spinach mushroom casserole that a friend send to me for a side dish for Thanksgivng however my MIL doesn't eat mushroom therefore she either doesn't eat it or I need to change the mushroom to something else.  Any suggestions

  • I hate mushrooms, too, and I usually just exclude them. You could use artichoke hearts. They're good with spinach.

  • Here is the recipe:

     

    Ingredients:
     4 pkgs frozen chopped spinach
     1 lb fresh mushrooms
     1/2 lb Swiss cheese
     1 1/2 cup milk
     1 clove garlic
     7 tbsp butter
     5 tbsp flour
     2 1/2 tsp salt
     3/4 tsp pepper
     paprika to sprinkle

    Cook spinach with 1 clove garlic and 1 tsp salt. Drain
    well  and remove garlic. Slice mushrooms and saute in 2 Tbsp butter. Set 
    aside. 
    Grate  1/2 lb Swiss cheese.

    Make white sauce. Take 5 tbsp butter and melt in pan.
    Add 5  tbsp flour and whisk briskly until all lumps are gone. Add 1 1/2 
    tsp  salt, 3/4 tsp  pepper and 1 1/2 cup milk and slowly bring to simmer. Be  careful not to  scald the milk. slowly add 3/4 of the Swiss cheese and 
    stir  until  completely melted. Mix mushrooms, spinach and cheese
    sauce  together and pour into a small casserole dish. Cover with remaining 
    cheese and  sprinkle with paprika on top. Let stand for 2 hours in 
    refrigerator. Bake at 350 degrees for 1 hour. 
     
    Serves 10 to 12 people.
