Britax Boulevard

Yesterday I posted about convertible seats for a Grand Cherokee and based off your recommendations, just tried out the Britax Boulvard and Evenflo Symphony.  I think I'm going to go with Britax, but have a question for those of you who have it.

The woman at BRU said things comes out of it, but didn't know enough to elaborate and I couldn't really play with it in the parking lot.   The seat looks tiny for my big boy.  Can the cushions inside, like the system around the head, come out?  I did get one part that's near the mid to lower back out easily, and it looks like the side impact part comes out, but I want to be sure.  Obviously, I want to use it now, but I'm thinking when he's using it when he's much older and bigger.

The cushions around the head don't come out; they're the side impact protection that, IMO, make the seat worth it.
