NCDR XP: King Ranch Chicken

I am making King Ranch Chicken to serve for about 20 people at a bridal shower tomorrow night. I tried out the recipe last week, and DH really liked it. I thought it was pretty good, too; however, neither of us liked the sogginess of the chips in the recipe. I'm thinking about not using chips in the actual casserole and using them crushed as a topping instead. I thought I would also have white rice and chips on the side so people can choose their preference of what to have under the chicken. What do you think?

  • Sorry...when I looked it up online there were so many recipes, it made me think that I was the only one who had never heard of it before. It is basically a chicken casserole with Rotel, cheese, and cream soups. The recipes I found called for mixing in tor

  • I would say then from how it sounds to go with your original idea of serving rice and chips so that people can decide how they want to eat it.

  • How are you serving it?

    If I was doing buffet style, I would put it on after it's done cooking.  Or take it out of the oven a few minutes before, top with the chips and put it back in.  This could be tricky if the chips burn.

  • Can you just crumble the chips and put them on top so they'll brown instead of mixing them in?  You can mix them with a little melted butter and they should brown up nicely while the casserole cooks.  If they get too brown before the casserol

  • I've only ever had (or cooked it) with tortillas, not tortilla chips.  I imagine the chips would get soggy!
