I definitely find meatless meals to be a money saver, but I think that's also dependent on what you have at home!

Eggs, scrambled, over easy, or even fried egg sandwich and make your own Mcbiscuit or Mcmuffin.
Spagetti without ground beef
I don't know if you consider tuna meat, but we used to do tuna cassero
