freezer meals (AKA the pat yourself on the back thread)

Finally sitting down and putting my cankles up on the ottoman....  I just needed a quick pat on my back as today I successfully made and froze:

- Pioneer woman chili

- meatloaf

- 2 lasagnas

- mac and cheese

- cilantro lime chicken

I had aspirations of adding tortilla soup and cheese enchiladas to the list, but those are going to have to wait for another day.

So ladies, go!  Pat yourselves on the back. :)

  • Those sound great, but I can't pat myself on the back.  I think the only thing I'll be making once LO arrives is a phone call to Dominoes and the chinese place by my house. lol  Actually, my mom is coming up for 2 weeks and she'll be cooking up

  • That's awesome!  We're still working on our freezer stash-- I can't spend too long on my feet anymore.  So far our freezer contains: Fragrant chicken (chicken and chickpeas etc), Vegetarian chili, and chicken taquitos.  We're adding chicken

  • That's great! I did mine last weekend, it was exhausting! I made 13, they're all crockpot meals. I wanted to make more already prepared stuff for the oven, like lasagna and pot pies and stuff, but my freezer is totally overflowing now!

  • Wow! You go! I wish I had the energy to cook, or the attention span, but right now my energy level is non existent , as is my ability to focus for more than a couple minutes...
  • I finally started my stash with 2 quarts of chicken noodle soup and 2 quarts of spaghetti sauce. Hope to add Mexican casserole and meatloaf to it later this week.
