Cows milk, solids and sippys

I recently posted about LO gagging on solids. Well, I think we've made some progress. He will now take Stage 3 consistency foods with slight chunks. I still have to mash the heck out of it with a spoon, but previous attempts led to gagging/vomiting, so I'll take what I can get. Also toast, waffles, cheerios, steamed green beans and greek yogurt with slight fresh fruit chunks have made their way to the menu. Pedi said starting at 11.5 months, I could start weaning formula for cows milk, but I am a little hesitant until I know LO has made it further past the gag reflex and definitely handle a wide variety of table food. Any thoughts out there of when it might be a good time to introduce WCM given DS issues with table food? Also, I have been attempting the sippy for quite some time. I have a straw and a soft spout. He seems to do better with a soft spout. Has the mechanics of it down, but LOVES to toss it after each drink. Kind of annoying. Hope he stops doing that soon. I give it to him at meals. should I start giving it to him throughout the day to get him more use to the idea and stop seeing it as a toy?  TIA
