Block feeding and pumping

Right now my son feeds on one side per feeding. I want to start pumping but not sure when to do it without increasing my supply too much . I'm nervous if I empty each side every 3 hrs instead of every 6 it will increase my supply. What is the best way to go about pumping so this doesn't happen?

I'd just pump the other side first thing in the morning every day. When the milk stops flowing, I'd stop pumping, rather than pumping for a few minutes or beyond.

Or you could pump the breast you just fed on and build the stash little by little.
