My mom is making her tuna casserole, despite my food snobbery, I love the stuff, it's like a bite of nostalgia.
I hate fish, so when ever my mom would make tuna casserole she'd always buy that nasty canned chicken too and make me a small one with chicken. I've only had it once as an adult and its pretty nasty. But I remember I was always so grateful my mom would make me something separate.
I was going to make chicken n dumplings and chocolate cobbler. However, I went shopping, so now I'm le tired. Instead we are getting Panera.

We had leftover roasted red pepper & spinach lasagna (Christmas Eve dinner) with a side of broccoli.
Yup. DH wanted to try their mac n cheese and another sandwich. So we had it again. I tried a new sandwich too, but still got broccoli and cheddar soup. Yum!

This was my original plan. But I only had beef chunks, potatoes and onion. Not a full stew.
Ingredients
1 pound ground turkey
1 onion, diced
1 (24 ounce) container of mariana sauce
2 tablespoons Italian seasoning
dash of red pepper flakes
16 ounces noodles (I used a combo of corkscrew and egg noodles)
2 cups of shredded 2% milk cheddar cheese
2 cups of shredded part skim mozzarella cheese
40 slices turkey pepperonis
How-ToIn a saute pan, saut? the turkey and onions until no pink is left and the onions are tender.
Meanwhile, cook the noodles according to the packaged instructions.
Once the meat and onions are done, stir in the mariana, Italian seasoning, and red pepper flakes.
Spray your crock pot with canola oil.
Spread 1/2 of the mariana sauce on the bottom of the crock pot.
Spread 1/2 of the noodles on top of that.
Spread 20 of the pepperonis.
Sprinkle with 1/2 of the cheeses.
Pour the remaining mariana sauce, noodles, pepperonis, and cheeses.
Cook on low for 3-4 hours.
