dinner ideas

Being back at work has made dinner such a hassle.  I don't get home until about 7:30 at night.  I am able to put quick stuff together in the morning, but am running out of ideas.  Oh yeah...and I'm trying to keep it healthy.  I'm still working on loosing this obnoxious baby weight.  Any easy, healthy, quick dinner ideas?

  • not super healthy...but not super unhealthy either...

    I like salad with cut up chicken fingers (from the Schwans man) on it...

    Turkey or chicken wraps

    Pita pockets are good too--I usually fill with green peppers, tomatoes, lettuce, and shredded carrots....you could add some protein in too

    Crock pot meals are the way to go though IMO, but try to keep them clean and not made from mostly processed foods.....

  • I did a bunch of freezer meals before DD2 was born and it was awesome. I was thinking it would be a good idea to have some in the freezer when i go back to work. The problem is most of what I did was not really healthylasagnas, casseroles, chicken pot pies, etc. Like you, I am trying to get some weight off as well. I looked at once a month mom yesterday and she has a healthy tab, but DD1 inturrupted me and I didn't get a chance to fully explore it.

  • Crock pot is the way to go if you want something warm right when you get home. There are tons of Weight Watchers and other healthy recipes online for the crock pot. 

    A lot of soups freeze well if you can make a larger batch during the weekend. I like freezing chicken tortilla, then adding fresh avocado and a little sour cream and cheese when serving.

    In the summer DH and I often pick a big salad week, where we load up on veggies at the store and  just change up our lean protein source each night. Those are quick dinner nights after the initial wash and chop day. We store everything in it's own container and assemble whatever we feel like for dinner.

    I like making quick sandwiches with pita or a wrap, a flavored tuna packet and plain greek yogurt instead of mayo. I'll mix in whatever veggies we have in the fridge too.  

    This isn't as healthy and is processed, but it sure is quick and easy and keeps us from ordering takeout. We've been having about once a week a PF Chang frozen dinner bag. They around $6 at Target and it's portioned perfectly for 2. You just toss the entire bag in a pan with minimal supervision and it's ready in about 15 minutes. That's our no effort dinner. We do add our own minute rice.

  • If you have extra time I would love the recipe. I haven't found chicken recipes that actually come out good in the crockpot. Thanks everyone for the suggestions!
