I voted for Sophia; although it is more popular, I think it goes better with your other daughters' names. They both end in "a" and I think "Giovanna, Gabriella, and Sophia" sound much better together than "Giovanna, Gabriella, and Juliet." I think Juliet sounds abrupt in this case, if that makes sense.
Have you considered the Italian version of Juliet instead? Giuletta? I actually think that would complete the sibset nicely, since you'd have the consistency of all Italian "G" names ending in "a".
Something else to consider- since you obviously have Italian heritage (given your last name), if that is something important to your family (which it seems to be based on your other daughters' names), it would be nice to give the third daughter an Italian name too. My family is Italian on both sides we had very strong Italian traditions, and I have always resented the fact that I don't have an Italian first name. But that would have felt even worse if the rest of my sibs DID have Italian names and I was the only one that didn't.
