My mother's birthday is coming up, and I want to make something similar to Applebee's bourbon street chicken and shrimp. I can't find a copycat recipe online. Does anyone have anything similar?

I can help with the sauce.. I make a bourbon sauce that is delicious!! But I don?t really use measurements. I season it to taste?.I will try and give you what I think is about right.
Use about a tablespoon of olive oil or peanut oil
Ketchup, 2 tablespoons
Apple Juice ? 1/3 cup
Ginger- 1 teaspoon
Brown sugar 1/3 cup
Soy sauce- 1/3 cup. Get the low sodium
Bourban Whiskey- 1/3 cup
Cornstarch? you will have to play with this to get your desired thickness of the sauce. Obviously add this last.
1 head of garlic- crushed. I use a lot of garlic in mine. You can go less if you want. I would start with a couple cloves first...
? cup of water.

Here's a recipe for their bourbon street steak, I can only assume that you could just substitute the meats:
Yield: 4 servings
1/2 cup bottled steak sauce 1/4 cup bourbon whiskey 1 tablespoon honey 2 teaspoons prepared mustard 4 beef rib, round, or chuck steaks (10 ounces each)
Combine all the ingredients except the steaks in a baking dish or resealable plastic storage bag; mix well.
Add the steaks; cover (or seal) and refrigerate for 2 hours, or overnight.
Preheat the grill to medium-high heat. Grill the steaks for 12 to 15 minutes, or until desired doneness, turning them over halfway through the grilling.
Enjoy!

The thing about anything blackened is that it is well seasoned and when you cook it you don't use butter or oil when sauteeing it (A small spray of Pam is ok). I would suggest you look online for a blackend chicken spices that you can buy.
I would also go to food network and look for a blackened chicken recipe. I suggest anything by Emeril because he is a New Orleans cook. When I looked at the picture and description of the dish on the applebee's website I didn't see any description of the sauce and I have never had it so I can't help you with that. Also sautee your onions in butter in a seperate pan and then add them to your food at the end.
