The old recommendation was start with just the yolk, and some peds are a little behind the times and still recommend that. But the AAP now says you can give the whole egg before one. They used to think that introducing foods that are more likely to cause allergies should be done later, but now studies show that waiting doesn't decrease the risk of allergies. I don't know if it increases them, or if it just doesn't matter.
So we do the whole egg. Lucia like scrambled eggs. And she'll likes eggs we make for our breakfast (for example, scrambled with feta, tomatoes, and basil).
Because our LO's intestines do not have all of the enzymes to break everything down, things like the egg whites are not usable for them. The proteins in the whites are too difficult to break down, so it is just filling up space without giving them calories. The yolk is a good source of fats and other nutrients and is highly recommended for a LO.
If you want to separate the yolk out you can either hard boil the egg, get an egg separator, or pass it back and forth between the two parts of the egg shell to let the whites fall into a bowl and keep the yolk in the shell. Then you can toss it into a frying pan and add little goodies to it.
Having said all of that, I just give Seth the whole egg anyway. It is doing him no harm.
