With my RCS I've been told no food after midnight the night before, but how does it work if I go into labor on my own? will they have to wait to do the RCS till a couple hours after I've eaten? What if i don't remember when I've eaten last? Should I refrain from snacks just incase I do go into labor?

No, don't refrain from eating "just in case."
Eat as you normally would and they'll deal with it. They just don't want you yarfing all over once you get medicated.
I ate breakfast six hours into labor and ended up with an unplanned c/s 15 hours later. No one even asked me if I had eaten.

For my c/s, they did ask me when I had eaten (which was not long prior to the c/s- I was laboring and it was an unplanned c/s). They couldn't wait to perform it as they were concerned with DS so they gave me practically every anti-nausia medication they had before I went in. I felt VERY ill the entire time but never actually vomited.
But pp are ight- I think their major concern is the vomit thing. If you need the surgery, they'll certainly bring you back immediately. If you can wait a bit, they'll probably have you do that.
