For tonight - chicken with stuffing. I make mine by mixing stuffing with 1 can of mushroom soup and 1 can water or milk. I mix frozen veggies in with the stuffing and then I put the chicken on top and season it. Bake in the oven until the chicken is cooked through. it is so freaking easy!
For another night - salsa chicken. 2-4 chicken breasts in the crock pot with one large jar of salsa over it (I like black bean and corn salsa). Cook for 4 hours, shred and serve over rice, in a tortilla, in an enchilada ... whatever you have on hand.
Chicken breasts, salt/pepper, 1 can condensed Cream of Chicken or Cream of Mushroom soup, 1 cans worth or milk in a baking dish. Cook at 350 for several hours. (I toss it in the oven while DD naps in the afternoon.) The chicken simmers in the gravy and gets super moist. Then I make some rice pilaf and frozen peas on the side. DD eats it all with gusto and it takes very little effort to make.
I sprink two breasts of chicken with some chicken tenderizer, coat them with olive oil, and sprinkle Italian seasoning over it. I bake it in the oven at 350 for about 40 mins. I serve it with some noodles or rice and a veggie.

Chicken Parmesan - dredge in egg then breadcrumbs, sautee, and serve on top of spaghetti. Sprinkle Parmesan & mozzarella on top.

I make it in a casserole dish, so about as much as just about fills up the casserole dish once the veggies are added - so 1/2 to 3/4 of a bag.
The "easy chicken bake" on the Stove Top box is easy and very good.
Spinoff of that, which sounds odd but is very tasty;
1 can apple pie filling
2 raw chicken breasts
1 box Stove Top
Spread pie filling in the bottom of a casserole dish, top with diced up chicken, spoon prepared stuffing on top. Bake at 375 or so for half an hour.
