One of my favorite things is to throw a few chicken breasts in the crockpot, cover with salsa and cook all day. After 6-7 hours, shred the chicken and serve with tacos! It's so easy and tastes delicious!
Would you believe you can make LASAGNA in your crock pot? I tried this recipe last week and it was out of this world!!!! What's awesome, as you probably already discovered, is with the crock pot you can squeeze in making dinner when you get the opportunity during a nap or a quiet alert time - here's my super easy super yummy veggie version.....the original recipe included browned ground beef mixed with the sauce layers - I haven't tried that yet.....I used frozen spinach and frozen miropoix (carrots, celery, and onion) blend I happened to have on hand....
9 uncooked lasagna noodles
1 jar spaghetti sauce
1 can tomato paste
1 can water
1 tsp garlic powder
1 tbsp italian seasoning
pepper
1/2 lb frozen cut leaf spinach
approx. 2/3 cup frozen miropoix
1 small container (approx 2 cups) cottage cheese
4 cups grated mozarella
1/2 cup parmesan cheese
spray crock pot with Pam
mix sauce, paste, water, spices, and veggies, then place 1/4 of mixture in bottom of pot
place 3 noodles on top - may need to break the outer ones
mix cheeses together, layer 1/3 on top of noodles
repeat layers twice more, then end with sauce
cook on low 5-6 hours
I put some more mozarella on top for final hour
I turned off the pot approx. 45 minutes before serving - and lasagna servings came out nicely formed, not sloppy or soupy
