Let me start ou by saying, (1) we rarely have leftovers in our house and (2) I'm a huge fan of fresh, not processed food.
DD is 11 mos old an eats all table food.
I have been making meals for her and then freezing them -- broccoli cheddar nuggets, homemade chicken nuggets, black bean burgers, banana pancakes, etc. But I feel like she eats the same things all the time. Give me some ideas!!
Re: What do you feed your pre-k kids for lunch?
DH takes our leftovers to work, our lunches tend to be fairly boring honestly. We always have either a fruit or veggie to start (they get to choose what). Then we do:
pb&j or cream cheese and jelly on whole wheat
scrambled eggs with veggies mixed in and whole wheat toast
"grilled cheese" which is actually cheese melted on bread in the toaster
yogurt
Occasionally in the winter I'll make a big pot of soup then freeze it in 2 cup containers (same as a can) and they'll have that for lunch. We don't do canned soup or other processed stuff because of the sodium content.
We eat mostly organic foods.
Lunch for DS who is 3 years old he normally gets:
Mac & Cheese with broccoli
Grilled cheese with fresh fruit
Organic turkey dogs with baked beans
Ham, Tuna or Turkey sandwich with fruit
Hummus with carrots, cucumbers and pita bread
Chicken nuggets with sweet potato fries
I make chicken noodles soup though out the winter and DS loves it. (I add extra carrots)
yogurt
quesadillas
grilled cheese
smashed avocado with salsa & either sweet potato corn chips or baby carrots
cheese sticks with crackers
PBJ
They always have some sort of fruit- strawberries, grapes, bananas, apples
