cake mixes

Anyone used a sparkling water in a cake mix? Ive tried coke before in a chocolate mix and it was ok, chewy, but the kids didnt care. I like the idea of a sparkling water-seems lighter and fresh. Our party is in a week and im running out of time. Ive used the applesauce thing and the egg replacer in the past, all with bad results-no rise in the middle; dry and/or chewy...theres got to be something out there that works and is good!!!

  • I've never tried sparkling water.  I use Sprite for cakes/cupcakes for ds.  I find the Duncan Hines Yellow Cake mix is the best.  The 325 setting is best (at least for my pans).

  • Love duncan hines!!! the only dairy free mixes ive found that arent weird or nasty. I may try the water just to see what happens...ive already had two trials this week that ended badly, so im on a roll!! ;)

  • We haven't tried sparkling water either.  Let us know how it turns out.  We make things from scratch using Bob's Red Mill Gluten Free All Purpose Baking Flour.  It is a pain to cook from scratch, and I'm not so great at making things taste "normal" for the rest of us, but I try!
  • I like the Duncan Hines and sprite. I had no problem mowing down the leftover cupcakes from DDs birthday ;)

  • I also use Duncan Hines with sprite, cooked at the temp listed and the lowest time suggested in the time range. Mine is always a denser pound cake consistency (I also like it cold in the fridge), but has never been chewy.

  • I've never heard of the sprite thing & I'm intrigued! Are you just replacing the volume of milk in the recipe with the same volume of sprite?
