Lasagna, Beer butt chicken, fajitas, scalloped potatoes and ham, breakfast (pancakes, eggs and bacon), and Beef and veggie soup poured over mashed taters.
For lunches we are having egg salad sandwiches, ham sandwiches (possibly making ham spread, not sure yet.) split pea soup.
Tonight - we had a friend over for a cookout late lunch. She's vegetarian, so I made black bean burgers and tomato cucumber and feta salad. She brought tabbouleh and a grapefruit pound cake. Dinner will be leftover of the salads with some mac and cheese probably.
Mon - pork and asparagus stir-fry over brown rice (from The Bitten Word blog)
Tue - Ina's weeknight bolognese with penne. Side of roasted broccoli.
Wed - quick night since it's our Bradley class. Chicken and avocado quesadillas.
Thu - Indian chickpea and eggplant curry, naan.

DH has been handling this for me for the last few weeks, and it's been SO wonderful to not have to think about it every day!
This week we're doing Tacos, Jumbalaya, Pizza, and Brats. Everything can be cooked today so that it makes meal times easier during the week.
Tonight-Stuffed artichokes, salad, and baguette
Monday-Pizza ( I have a doctors appointment, so I can just pick it up on the way home)
Tuesday-Herbed sirloin roast, asparagus, sweet potatoes
Wednesday-Honey lime tilapia with blueberry salsa and squash

Tuesday: ribeyes, roasted potatoes (my boys love potatoes!), spinach
Wednesday: salmon, brown rice, corn
Thursday: greek chicken, brown rice, veggie TBD
Friday: we usually order out pizza, so probably that

Thats it. I'm on the BRAT diet so I'm not actually eating any of this stuff so I'm not terrible motivated to meal plan. lol
