If someone was referred to in the interview process as "you will be interviewing with Jane Smith" and they introduced themselves to you as Jane, when writing a thank you would you address it to Dear Jane or Dear Ms. Smith. I tend to err on the side of conservative and do Ms. Smith (for the record I wore a skirt suit with hose after all my polls but I will be doing pants for 2nd round) but I am curious...Thx!
In my industry, we pretty much all use first names with each other (including clients and outside vendors) so I would go with Dear Jane. I think it would sound weird otherwise.
Assuming you don't know this person other than from this interview, you should use Ms. Smith.

Always go with the more conservative option if you are just being introduced to a company, or they explicitly state otherwise. I would go with Ms. Smith.

Thanks all...I did err on the side of caution & used last name! I figure people won't be offended by use of last name but technically could be by use of first name (even though I suspect most wouldn't, just to be safe).
