Crisp and mildly tart apples make the best apple pies....my favorite bakery uses Elstar apples (I asked because it's the best damn pie I have ever had in my life!).
I use a variety of types in each pie. Def granny smith mixed with some other sweet ones. I also was told once to include one pear in the mixture. I don't know the reason but I have been doing it for a few years and my pies are pretty damn delicious!

i like the tangy taste of Granny Smiths the best in my pies too.
