Gotta do the grocery shopping today and I need some ideas for healthy dinners (that don't take long to cook)...any and all suggestions are welcome, but I'm especially interested in new fish recipes!
baked sole is really good, quick and easy, you can even substitute any white fish. soak a fillet of sole in milk, salt and pepper, parsley and a little bit of lemon zest for about 45 min. Cover with a Ritz cracker and butter mixture (crumble ritz crackers and mix with melted butter) and put in the oven at 350. Cook until the fish is at 140 internal temp (I think about a half an hour)
I do sole/halibut in tinfoil on the BBQ- I slice up tomatoes, zucchini add some fresh basil and dill, then some salt and pepper... very yummy and cooks in about 10-15 minutes.
I got a great cookbook, it's from Cooking Light magazine and it's their 15-minute cookbook. Every recipe I tried in it so far has been yummy and really easy! I bought it at Books a Million, don't confuse it with the 5 ingredient 15 minute one, I don't know how that one is.
I dont eat fish... but I eat a lot of easy chicken recipes! Once a week I boil a few chicken breasts and then shred them. After I use the meat for homemade pizzas, tacos, on salads, soups, sandwiches, chicken pot pie and more.

I dont know if its real healthy or not but I'm making lasagne tonight! Its easy because I can make it ahead of time (whenever DS decides to nap) then keep it in the fridge till its time to throw it in the oven. I just use the recipe on the back of the oven-ready lasagne noodle box...I'm real creative like that!
I love salmon. I usually don't measure things when I am mixing up recipes but I have made a teriyaki glazed salmon with teriyaki sauce, a little soy sauce, sesame seeds and garlic. It's so yummy especially grilled. Chicken breast marinated in Italian dressing and a little worchestire sauce is also very good, I usually add mushrooms to this. It can be grilled or baked.
I made a spinach shrimp salad last night, super easy and you can preparea bunch of it ahead of time. I made my own warm bacon vinegrette dressing.... I also do chili in the crock pot, let it cook all day and its done when you get home. We use ground turkey which is leaner than beef...

Try this - it's AWESOME and incredibly easy. TIP: add fresh broccolli on top of the cream of mushroom soup. Use reduced sodium/fat free ingredients so its pretty healthy and still yummy!
